Veggie Chili Con Carne with Do Goodly Spiced Superstar Salsa

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), diced
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1/2 cup dried lentils (or 1 can of lentils, drained and rinsed)
  • 1 cups vegetable broth or water

Method

1. Prepare the Chili:

  • In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic. Cook for 3-4 minutes, stirring occasionally, until softened and fragrant.
  • Add the lentils, pepper and beans: Stir in the dried lentils (if using canned lentils, add them later), kidney beans, and black beans. Cook for another 2-3 minutes, mixing everything well.
  • Pour in the Do Goodly Spiced Superstar Salsa. Stir everything together, making sure the salsa coats everything.
  • Let it simmer for 15-29 minutes, or until the lentils are tender and the flavours have melded together. Stir occasionally, and if the chili thickens too much, you can add a little more vegetable broth or water.

  • Ladle the chili into bowls.
  • Add jalapeños: Stir in the sliced fresh jalapeños, or leave them as a garnish if you’d prefer a milder dish. If you like it spicy, feel free to add more!
