Pea Pesto Pasta with Broccoli using Do Goodly Jalapeno & Smashed Pea Guacamole Dip

Ingredients

  • 250g of pasta (such as penne, spaghetti, or your preferred type)
  • 1 medium head of broccoli, cut into florets
  • Salt, for the pasta water
  • 1 pot of Do Goodly Jalapeno & Smashed Pea Dip or you could use our Smashed Pea Guacamole
  • Small handful of walnuts, roughly chopped
  • Fresh basil or parsley leaves (optional)

Method

1. Cook the Pasta and Broccoli:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
  • Blanch the broccoli: About 3-4 minutes before the pasta is done, add the broccoli florets to the pot with the pasta. Continue cooking until both the pasta and broccoli are tender. Drain the pasta and broccoli.
  • Stir in the Do Goodly Jalapeno & Smashed Pea Dip. Mix well and cook gently for 1-2 minutes to warm it through.

2. Serve:

  • Divide the pasta with broccoli into serving bowls.
  • Garnish with the chopped walnuts, adding a nice crunch and nuttiness to balance the creamy sauce.
  • Optionally, sprinkle with fresh basil or parsley for added flavour and colour.
