

Do Goodly Spiced Superstar Salsa barley and red lentil Bolognese
Ingredients
Here’s a tasty recipe for a veggie Bolognese made with barley, red lentils, and Do Goodly Spiced Superstar Salsa as the sauce. It’s a hearty and flavourful dish that’s perfect for spaghetti and topped with veggie cheese!
For the Bolognese:
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1-2 celery stalks, diced
- 1/2 cup barley (pearl barley or hulled barley)
- 1/2 cup red lentils (rinsed)
- 1 pot of Do Goodly Spiced Superstar Salsa
- 2 cups vegetable broth or water (add more if needed)
- 250g spaghetti (or your preferred pasta)
For Garnish:
- Grated veggie cheese (such as plant-based mozzarella or parmesan)
- Fresh basil or parsley leaves (optional)
Method
1. Cook the Barley and Red Lentils:
- In a medium pot, combine the barley and red lentils. Add enough water to cover the grains by about an inch.
- Bring it to a boil, then reduce the heat to low. Let it simmer for about 25-30 minutes, or until the barley is tender but still slightly chewy and the lentils are cooked. Drain any excess water and set aside.
- Sauté the vegetables: Heat olive oil in a large pan over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté for 5-7 minutes, until the vegetables soften and the onion becomes translucent.
- Stir in the Do Goodly Spiced Superstar Salsa. Mix everything together and cook for about 2 minutes, allowing the flavours to meld.
- Add the barley and lentils: Stir in the cooked barley and lentils, ensuring they are well-coated with the salsa mixture.
- Add the broth and season: Pour in the vegetable broth (or water) and stir to combine. Add dried oregano, basil, salt, and pepper. Bring the mixture to a simmer, then cook on low heat for 15-20 minutes, stirring occasionally, until the sauce thickens and the flavors meld.
- While the sauce is simmering, cook the spaghetti according to the package instructions in a large pot of salted boiling water.
- Drain the spaghetti and set aside.
2. Serve:
- Place a portion of the cooked spaghetti on each plate.
- Top with a generous serving of the barley and lentil Bolognese sauce.
- Garnish with grated veggie cheese and fresh basil or parsley.
