Here’s a simple and delicious recipe for a Smashed Pea Guacamole sandwich stack made with seeded sourdough bread, cucumber, radish, and salad leaves.
- 2 slices seeded sourdough bread
- 1 pot of Do Goodly Smashed Pea Guacamole or Jalepano & Smashed Pea Guacamole
- 1/2 cucumber, thinly sliced
- 4-5 radishes, thinly sliced
- A handful of mixed salad leaves (e.g. spinach or lettuce)
- Optional: Lemon juice or a drizzle of olive oil for extra flavour
Method
- Toast the sourdough bread: Lightly toast the slices of seeded sourdough bread until golden and crispy.
- Spread the guacamole: Once the bread is toasted, spread a generous layer of Do Goodly Smashed Pea Guacamole on one side of each slice.
- Layer the vegetables: On one slice of bread with the guacamole, layer the thinly sliced cucumber, radishes, and salad leaves.
