1. Prepare the Chili:
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic. Cook for 3-4 minutes, stirring occasionally, until softened and fragrant.
- Add the lentils, pepper and beans: Stir in the dried lentils (if using canned lentils, add them later), kidney beans, and black beans. Cook for another 2-3 minutes, mixing everything well.

- Let it simmer for 15-29 minutes, or until the lentils are tender and the flavours have melded together. Stir occasionally, and if the chili thickens too much, you can add a little more vegetable broth or water.
2. Serve:
- Ladle the chili into bowls.
- Add jalapeños: Stir in the sliced fresh jalapeños, or leave them as a garnish if you’d prefer a milder dish. If you like it spicy, feel free to add more!
- Garnish with fresh coriander leaves for a burst of colour and freshness.
