

Do Goodly Smashed Pea Guacamole with toasted chickpeas on Toast
Ingredients
- 1 tbsp olive oil
- 1 tin of chick peas (drained)
- 1 sweet potato
- 1 tsp paprika
- Handful of watercress
- Handful of spinach leaves
- 1 pot of either our Smashed Pea Guacamole or Jalapeño & Smashed Pea Guacamole
Method
This a super healthy and flavour packed meal for anytime of the day!
- Slice the sweet potato into wedges and rub with olive oil. Oven cook for 20-25 minutes until golden.
- Simply toast the chick peas in a pan with the olive oil and add the paprika spice. Cook till the chickpeas have the appearance of being toasted/crispy and they have been fully coated in the paprika.
- Toast the seeded sourdough bread and add enough Smashed Pea Guacamole or Jalapeño & Smashed Pea Guacamole on top to your liking. Add the chickpeas on top of the guacamole.
- Bring it all together on a plate with the salad leaves and baked sweet potato on the side and the watercress as a garnish.
