Loaded Nachos with Do Goodly Spiced Superstar Salsa Chilli & Nacho Cheeze

Ingredients

For the Chilli:

  • 1 tbsp olive oil
  • 1 pot of Do Goodly Superstar Salsa
  • 150g veggie mince
  • 1 bell pepper, diced (any colour)
  • 1 can (15 oz) kidney beans, drained and rinsed

For the Nachos & Cheeze:

  • Tortilla chips (enough to cover your serving dish)
  • 1 ripe avocado, chopped into chunks
  • Fresh jalapeños, sliced
  • Fresh coriander leaves for garnish
  • 1 pot of Do Goodly Nacho Cheeze

Method

1. Prepare the Chilli:

  • Sauté the veggies: Heat olive oil in a large pot over medium heat. Add veggie mince, sautéing until softened (about 5 minutes or as directed on pack). Add the bell pepper and cook for another 3-4 minutes.
  • Add the beans and sauce: Stir in the kidney beans and Do Goodly Superstar Salsa. Stir in well and cook chilli mix at low heat for further 5 minutes. Ensure all ingredients fully cooked through before serving.

2. Prepare the Nacho Cheeze:

  • Gently warm the Do Goodly Nacho Cheeze on low heat.

3. Assemble the Nachos:

  • Prepare the nacho base: Lay a generous layer of tortilla chips on a large serving plate or platter.
  • Top with chili: Spoon the warm chilli over the tortilla chips, spreading it evenly.
  • Add the Do Goodly Nacho Cheeze: Drizzle or pour the nacho cheeze over the chilli and chips, making sure to cover it generously.
  • Add fresh toppings: Sprinkle chopped avocado chunks, sliced jalapeños, and fresh coriander leaves on top of the nachos.
  • On the side: Add our Superstar Salsa & either of our Smashed Pea Guacamole variants for that extra taste kick!

4. Serve:

  • Serve immediately while warm. You can also offer extra cilantro, lime wedges, and a side of salsa or guacamole for extra flavour.
